Delicious smashed potatoes with garlic and a pinch of herbs, rosemary and thyme is quick and easy to make for Thanksgiving, Christmas, or is even perfect for your weeknight dinner.
I am always on the hunt for delicious side dishes to add to our dinner rotation that are easy to throw together like these yummy sautéed green beans with garlic and parmesan, this best asparagus in under 10 minutes or these oven roasted carrots.

Smashed Red Potatoes Ingredients
These smashed potatoes come together very easily with a few staple ingredients. They feel fancy enough for a holiday side dish and delicious enough for everyday meals.
For this recipe, you will need these ingredients:
- 1.5 pound bag of little red potatoes- I use the tiny red ones, but the yellow or larger red ones can be used as well. If using the large ones, I recommend cutting them in half after boiling and turning cut side down before smashing and baking.
- butter
- olive oil
- minced garlic
- kosher salt
- fresh ground black pepper
- fresh rosemary and thyme
If you prefer, you can omit the fresh herbs and have just smashed garlic potatoes. They are very good as well! I was lucky enough to still find some growing in my garden today so I used them, but when I don't have any on hand, I just season with the garlic, salt and pepper.
How to Make Smashed Potatoes
- First, boil the potatoes.
- Next, smash them on a baking sheet.
- Bake for 12 minutes.
- While baking, melt butter and lightly sautée garlic. Mix in olive oil and herbs.
- Drizzle over potatoes. Sometimes this is easier with a big spoon.
- Sprinkle potatoes with kosher salt and pepper
- Return them to the oven and bake for an additional 12-15 minutes or until they begin to get golden brown on the edges. Take care not to burn the garlic.
Other Variations
This recipe is very easy to mix up by adding in other ingredients to your smashed potatoes for a different flavor.
Try some of these for a little change:
- parmesan cheese
- chopped bacon
- cheddar cheese
- chives
- a dollop of sour cream on each potato
- red pepper flakes
- hot sauce
Smashed Potatoes with Garlic and Herbs

Ingredients
- 1½ pounds little red (or yellow) potatoes
- 3 tablespoons butter (I use salted butter)
- 2 cloves minced garlic (or 1 teaspoon)
- 1 tablespoon olive oil
- ½ tablespoon chopped fresh herbs (rosemary and thyme)
- ½ teaspoon kosher salt
- ¼ teaspoon freshly cracked pepper
Instructions

preheat oven to 425°

Boil whole potatoes in a big pot until fork easily slides into the soft centers, approximately 10-15 minutes. Strain in a colander and allow to sit for a few minutes to sort of air dry.

Either grease a baking sheet or line with parchment paper. Dump potatoes onto pan and smash each one down with the back of a fork or potato masher, keeping them in one piece.

Bake for about 12 minutes.

While potatoes are baking, melt butter in a skillet over medium heat. Add garlic and sautee for about a minute. Remove from heat and stir in olive oil and freshly chopped herbs.

Remove potatoes from the oven and drizzle with butter mixture, evenly disbursing the minced garlic. Sprinkle potatoes with salt and pepper.

Put potatoes back in the oven and bake for an additional 12-15 minutes or until potatoes begin to turn golden brown. Keep a close eye on them to be sure to remove them from the oven before the garlic burns.
