Perfectly sautéed green beans roasted with garlic and topped with parmesan cheese. This healthy recipe is a delicious, quick and no-fuss side dish perfect for Thanksgiving, Christmas, or any family dinner night.
These green beans are so easy to make, taste delicious, and come together in just minutes! Many of the green bean recipes during the holidays are in the form of creamy casseroles. While those can be good, I prefer this simple and delicious recipe where the flavors of the vegetables are enhanced and not covered up.
How to Prepare Fresh Green Beans
When shopping for fresh green beans, be sure to pick out the ones that are nice and firm. Older beans tend to get soft and just don't have the best consistency. Also, you will want to make sure you avoid any that are turning yellow or brown. Bright green and firm will be best in this recipe!
Before sautéing the green beans for this recipe, sort through and remove any beans that are soft or yellow/brown. Rinse them well and cut the ends off of each.
Sautéed Green Beans Recipe
These sautéed green beans are firm and flavorful. Keep in mind when you are making them that they are not supposed to be mushy like canned varieties. You will only want to cook them until they are tender-crisp but still hold their shape.
Note: a vegetable that is cooked tender-crisp is heated and cooked all the way through, but still has some snap and texture to it.
- Wash green beans and cut off ends.
- Heat oil in a pan on the stove over medium heat. Add minced garlic and sautee for 30 seconds.
- Dump green beans in pan with salt and pepper. Sauté over medium heat until tender-crisp, approximately 6-8 minutes, stirring frequently.
- Remove from heat and freshly grate parmesan cheese over the top. The recipe calls for 1 ounce, but I say live your best life and load up as much as you want on there.
- Remove from heat and freshly grate parmesan cheese over the top
When you serve this recipe, be sure to get all of the little flavorful cooked garlic and bits from the bottom.
Recipe Variations
If you are felling adventurous, you can add one or more of these extra toppings to the sautéed green beans. Simply make the recipe as described above and top with one of the following.
- butter
- freshly squeezed lemon
- fried pancetta
- crumbled bacon
- parmigiano reggiano
- a pinch of red pepper flakes

Ingredients
- 1 tablespoon olive oil
- 1 teaspoon minced garlic (about 2 cloves)
- 1 pound fresh green beans
- ½ teaspoon kosher salt
- ⅛ teaspoon fresh ground black pepper
- 1 ounce grated parmesan cheese
Instructions

Add green beans, kosher salt and black pepper, tossing to coat the green beans evenly. Saute over medium heat until crisp-tender, approximately 6-8 minutes, stirring frequently.
