I am always looking for delicious side dish recipes to add to our weeknight dinners that are healthy and easy to throw together like these yummy sautéed green beans with garlic and parmesan or this best asparagus in under 10 minutes.

These oven roasted carrots are so good that we rarely have leftovers. My little guy even sneaks them when he thinks I am not looking while I finish preparing the rest of dinner. I love it. The sweetness of the carrots mixed with the saltiness make them flavorful and hard to resist.
Ingredients
The best thing about this oven roasted carrots recipe is that it comes together in just minutes with mostly pantry staples.
You will need:
- fresh whole carrots
- olive oil
- kosher salt
- freshly ground black pepper
- garnish with fresh parsley or dill
How to Make Oven Roasted Carrots
- Preheat oven to 400°
- Cut tops off of carrots (and bottoms if you prefer)
- Cut each carrot at an angle, in 1 1/2" slices. If the slices are too thick, cut in half lengthwise.
- Dump carrots in a bowl and throw oil, salt, pepper on top of them.
- Toss the carrots until well-coated.
- Pour onto a parchment lined baking sheet with sides. Make sure carrots are in a single layer.
- Bake in the oven for 20 minutes or so until they are fork tender but not mushy.
- Remove from oven and sprinkle with fresh herbs (optional) before serving.

- 12-14 carrots (14 if they are thin, less if not)
- 3 tablespoons olive oil
- 1¼ teaspoon kosher salt
- ½ teaspoon black pepper freshly ground
- fresh parsley or dill, minced for garnish

Roasted carrots are simply delicious! Fresh thyme gives them a delicious taste, too. I occasionally melt some butter, add some local honey and drizzle them before serving. So delectable!
