Make-ahead breakfasts are one of the easiest ways to ensure busy mornings go smoothly! Whether it is back to school or back to work, they just make life easier. I love to make delicious bagel sandwiches and also these omelet and potato breakfast bites and oven egg sandwiches to pop in the freezer. We also love these breakfast burrito bites. They all freeze and reheat beautifully!
I love that I can pop them in the microwave and have a hearty breakfast ready for my family in just a minute or so!
Easy Freezer Bagel Breakfast Sandwiches
It seems like every year when school starts back up again in the fall, the mornings get crazy busy and I remember just how much I love make-ahead freezer breakfasts! I have noticed that my kids are much more focused and happy when I fill their little bellies before school.
This year it is very likely that we will be homeschooling, so I am planning on having my freezer stocked full to make life easier.
Customizing the Sandwiches
Toppings
The eggs in this recipe are so easy to customize because they are cooked in a muffin tin. Feel free to chop up meat or veggies and add them to the eggs before cooking. You can also play around with herbs and spices to change the flavor.
Here are some ideas:
- bacon
- ham
- Canadian bacon
- sausage
- chorizo
- scallions
- onions
- fresh herbs
- tomatoes
- peppers
Cheese
The cheese can also be customized to change the flavor. Cheese makes everything better so you mix and match to your heart's content. The sliceable (or shreddable) cheese is best. Consider trying some of these to change up the flavor:
- colby jack
- cheddar
- pepper jack
- mozarella
If you are using a shredded variety, just throw a little handful on top of your eggs before cooking. You can see my omelet and potato breakfast bites for how to use the shredded cheese (and other added omelet toppings) this way.
Frozen Breakfast Bagel Sandwich Ingredients
This recipe is unique to the other bagel sandwich recipes because I use mini bagels. With the larger bagels, sometimes there can be too much bagel and not enough of the good stuff in the middle. This is just the perfect combination of high quality ingredients!

Assembling the Bagel Breakfast Sandwiches
By assembly lining the process, these sandwiches come together so quickly and easily! If you want to make a large quantity, go for it! These steps make it easy to do.
Step One: Cook the Meat
If you are using meat, you will need to cook it before assembling the bagel breakfast sandwiches. You can see here how to make the most perfect bacon in the oven. It is the easiest way to cook a large quantity perfectly. I love using this thick cut bacon for these sandwiches especially.
Step Two: Cook the Eggs in a Muffin Tin
The thing I love about this recipe is how easy it comes together, and cooking the eggs in a muffin pan is one of the reasons why! They are so quick to whip up:
- Preheat oven.
- Crack eggs into a mixing bowl.
- Add milk, pepper, salt.
- Whisk.
- Grease muffin pan.
- Pour evenly between the 12 cups
Each recipe fills one muffin tin, so feel free to double or even triple the recipe and fill multiple muffin pans.
Step Three: Assemble Breakfast Bagel Sandwiches
These bagel breakfast sandwiches come together so fast! You can toast the bagels before assembling the sandwiches if you prefer. If you want extra "glue" throw an extra slice of cheese on it so it is on both the bacon and egg side of the bagel.
You can really assemble these in any order you prefer, but here is how I do it:
- Open bagel and lay flat.
- Rip cheese slice in half and stack on bottom piece.
- Add bacon or ham (or both). I break the bacon in half and lay the pieces side by side.
- Stack on the eggs.
- Add top of bagel.
If you are eating them right away, stick them in the microwave for 20-30 seconds to melt the cheese or bake them in a 350 degree oven for 10-15 minutes.
Step 4: Wrap Sandwiches for the Freezer
I prefer to wrap my sandwiches in parchment, but foil or plastic work as well. Sandwich baggies are a quick way too. Once I have all of the sandwiches wrapped, I carefully line them up in a resealable freezer bag. It is important to make sure they aren't too tight so they don't get smashed.
Reheating Frozen Bagel Breakfast Sandwiches
There are a couple of ways to reheat frozen breakfast sandwiches.
For the fastest method (this is the method we use), remove from the freezer and pop it in the microwave, still wrapped in parchment, for one minute or so, depending on your microwave. If you used foil or plastic to wrap before freezing, make sure you remove the foil and wrap in a paper towel before microwaving.
For the best taste, allow to thaw overnight. Then, microwave, wrapped in a paper towel, for 40 seconds- 1 minute depending on your microwave. Or, you can also put them on a baking sheet and pop them in a 350° oven for 10 to 15 minutes.
Freezer Breakfast Bagel Sandwiches

Ingredients
- 12 eggs
- 2 T milk
- 1/2 tsp. ground pepper
- 1/2 tsp. salt optional
- 12 slices ham or cooked bacon
- 12 slices cheese
- 12 mini bagels
Instructions
Eggs

Preheat oven to 325 degrees.

In a mixing bowl, add eggs, milk, salt (optional) and pepper. Whisk together until well combined.

Grease muffin pan generously. Pour egg mixture evenly between the 12 muffin cups.

Bake for 17-19 minutes until eggs are just cooked. Be careful not to over-cook.
Assemble the Breakfast Bagel Sandwiches

On one half of the bagel, stack the cheese, meat, egg, and then top with the other half of the bagel.

If you are going to eat right away, pop in 350 degree oven for 10-15 minutes or until the cheese melts.
To Freeze

Wrap each sandwich individually in parchment, foil or a resealable plastic bag.
To Reheat
