Fluffy and delicious blueberry pancakes, homemade in just a couple minutes from scratch. A filling family favorite recipe for breakfast or even dinner!

We love blueberry pancakes around here. We actually eat them for dinner more often than we eat them for breakfast. My family eats them just as quickly as I can cook them and they always come back for seconds!
The wonderful thing about this recipe is that they are filling, can be customized, and are delicious as leftovers.
Ingredients
As with any recipe, the quality of ingredients makes a big difference in the finished product. I used a couple of my favorites in these blueberry pancakes: the O Organics Lowfat Milk, O Organics Large Brown Eggs, and topped off with my very favorite O Organics 100% Pure Maple Syrup.

How to Make Blueberry Pancakes
The batter is so easy to whip up that it really isn't much more work than boxed pancake mixes. It tastes much better though!
Pancake Batter
To make pancakes, just start by mixing milk and lemon juice and setting aside for 5 or so minutes. You are making "buttermilk" in this step. In the meantime, whisk together dry ingredients in a mixing bowl and melt the butter. Then, make a well in the middle of your dry ingredients and pour butter, egg, vanilla, and "buttermilk" in the middle. Carefully use the whisk to combine ingredients, but don't over-mix.
That's it! It really comes together in minutes.
Cooking Blueberry Pancakes
Heat frying pan or griddle on medium to madium-low heat. Grease with cooking spray or a little pat of butter (butter will give pancakes that golden brown outside).
Pour about 1/3 cup batter onto pan and gently push edges out to make a circle. Batter will be thick to make those fluffy cakes. Drop several blueberries (and any of the other toppings you want to add) around the top of the pancake. I much prefer adding things this way and not mixing them into the batter. It is much easier to control the amount in each pancake.
Cook until bubbles start to form and the edges firm up. I always take a peek at this point to make sure the underside is a nice golden brown.
Flip and cook for another 1-2 minutes until pancakes are fluffy and cooked through.
Customize Pancake Toppings
Sometimes I add a pinch of cinnamon or chopped walnuts. Occasionally, I even sneak in a few chocolate chips just to make the little ones smile. I will give you some more ideas to try. It is always fun to try out new combinations!
Try adding some of these things to customize the recipe:
- pecans
- walnuts
- raspberries
- blackberries
- pinch of nutmeg and/or cinnamon
- chocolate chips
- lemon or orange zest
We usually eat these blueberry pancakes with maple syrup, but here are some different topping ideas to try:
- extra berries
- sliced bananas
- whipped cream
- yogurt
- honey
- peanut butter
- coconut
- cooked apples
- sprinkles (we do this on holidays and birthdays)
- hazelnut spread
How to Freeze Pancakes
I try to double the batch so we have extras and I usually put them in the freezer for later. They make for really easy mornings later on. All you have to do is:
- Cool pancakes to room temperature.
- Stack with a sheet of wax paper or freezer paper in between each one.
- Put in a resealable freezer bag and throw in the freezer.
- When ready, pop them in the microwave for a minute (give or take, depending on your microwave).
I made these blueberry pancakes last night and the kids ate the leftovers this morning for breakfast. We love them!

Blueberry Pancakes
Delicious blueberry pancakes
Ingredients
- 1 3/4 cups milk
- 2 T lemon juice
- 2 cups flour all purpose
- 1/4 cup sugar
- 2 tsp. baking powder
- 3/4 tsp. salt
- 4 T melted butter
- 1 large egg
- 2 tsp. vanilla
- 1 1/2 cups blueberries fresh or frozen

Mix milk and lemon juice and set aside for 5 minutes. (you are making "buttermilk" with this step"

Lightly spoon flour into measuring cup, level top, and dump into a. mixing bowl. Add baking powder, salt, and sugar. Whisk dry ingredients until well combined.

Make a well in the center of the dry ingredients and crack an egg into it. Pour vanilla, milk mixture, and slightly cooled melted butter. Whisk all ingredients until just combined. Don't overmix.
