Growing up my Mom would always make this salad, especially during the summer months when we wanted something lighter and cooler when we were sweating to death in AZ! This is also one of my "go-to" salads for a baby shower or family get together. It can feed a crowd if doubled and can be made the day before. I actually prefer that it sit in the fridge for a few hours or overnight so that the dressing can absorb into all the chicken and pasta and it can be completely chilled. Enjoy!
Chicken Bowtie Pasta Salad

Cook Time 15 minutes
Total Time 45 minutes
Ingredients
Ingredients:
- 2 chicken breasts cooked and cubed
- 4-6 c cooked bowtie pasta
- 1 c diced celery
- 2 c halved red grapes
- 2 c diced apples
- 1- 20 oz can pineapple tid bits drained well
- slivered almonds optional
Dressing:
- 1 tsp salt
- 1/4 tsp pepper
- 2 Tbl chopped green onion
- 1 pinch ginger
- 1 pinch thyme
- 1 c mayonnaise
- 8 oz Cole Slaw dressing
Instructions

Place all Salad ingredients in a large bowl. Set aside.

Add all Dressing ingredients to a bowl and whisk until combined. Pour 3/4 of the dressing over the salad, stirring gently until it is evenly coated. Let chill in the refrigerator for a few hours or overnight. Add more dressing before serving if needed.
