The big game is coming up so I thought I would share one of our favorite appetizers to spice up your game day! Well, it is a really hearty appetizer so we actually like to eat it as a meal sometimes. Either way, it is layered and delicious, and finger food at its finest!
I grabbed all of the ingredients while I was at Albertsons and will put the full recipe at the end of the post. It is a fun one to do with the kids, or to customize to everyone's tastes.
To create your burrito base, grab 6- 10" tortillas and cut them into fourths. A pizza cutter makes it super easy.
Gently press the tortillas quarters into the bottom of 2 muffin tins (24 total burrito bites). They don't have to be perfect at all, so just have at it. It helps to make the bottom have a defined cup to hold more, but don't stress too much about getting them perfect.
Next, brown one pound of ground beef. Add Old El Paso™ Taco Seasoning and water and follow packet instructions.
Set your meat aside for just a moment and grab your refried beans. I use a tablespoon for all of these next fillings. For the beans, I use just on the scant side of one tablespoon, dropping each dollop into each cup.
Then I add a tablespoon of the taco meat. Once I drop the meat into the cup, I use the back of the spoon to press both meat and beans into the bottom of the tortilla cup.
I then added a tablespoon of Spanish rice.
Then sprinkle the top of each cup with cheese. You can use whatever cheese you prefer. I used a Mexican blend here.
Then cover your pans with Aluminum foil and throw them in the oven for 20 minutes, or until the cheese is nice and melted and bubbly. Remove foil and bake for an additional 2-3 minutes or until the tortilla edges are nice and golden brown. Crisping these edges gives the burrito bites such a great flavor and crunch.
Now it is time to add toppings! You can add whatever you love on your burritos. A few suggestions: tomatoes, avocados, peppers, salsa, hot sauce, shredded lettuce.
Then add a dollop of sour cream to each and garnish with scallions and/or cilantro.
The kids love them, the adults love them, and they are easy to eat while watching the game! Win-win.
Burrito Bites
Ingredients
- 1 pound ground beef
- 1 packet Old El Paso Taco Seasoning
- 2/3 cup water
- 1 can Old El Paso refried beans
- 1 box Old El Paso spanish rice cooked according to package instructions
- 1 bag shredded cheese
toppings: tomatoes, avocados, peppers, salsa, hot sauce, shredded lettuce, sour cream, cilantro, scallions
Instructions

Preheat oven to 350 degrees. Cut 6- 10″ tortillas into fourthswith a pizza cutter. Gently press the tortillas quarters into the bottom of 2 muffin tins.
