I am a little bit of an experimenter in the kitchen. Sometimes it works, sometimes it doesn't. I loved the Omelet and Potato Breakfast Bites my mom and I invented, and I thought making Breakfast Burrito Bites would probably be yummy too. Well, as luck would have it, they actually turned out to be delicious. I love when that happens!
I have made them so many times already, including for a brunch we had at our home after our baby's blessing. They were a huge hit! I even made one more pan than I thought we would need, and they were completely gone by the end! They almost seem fancy, but The best part is these are so easy! You can also make them ahead, freeze them and just pull out one serving at a time for breakfasts on the go. Just reheat in the microwave and they are delicious! My husband particularly loves these... so this recipe is definitely man-approved!
Easy Breakfast Burrito Bites
Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes
Ingredients
- 8 eggs
- 1/4 cup milk
- cheddar cheese grated
- 3 flour tortillas
- salt and pepper to taste
- toppings you can really use whatever you want. I used spinach, bacon, ham, red peppers… but other ideas include: sausage, mushrooms, hash browns, onion, tomatoes, basil, zuchinni, squash, etc. You just have to make sure that the meat is precooked
Instructions

First, preheat your oven to 350 degrees. Then, cut your tortillas into quarters.

Grease a muffin pan and press a tortilla quarter into each spot. They don’t have to be perfect, but do try to press the tortilla into the bottom to create a nice little cup. Set aside.

In a bowl, crack your 8 eggs and discard shells.

Add 1/4 cup milk and whisk well. You can add salt and pepper to taste. I leave it out because breakfast meats usually have salt. Set aside.

Finely chop all of your toppings. I used spinach, ham, bacon, and red peppers, but I have used a lot of other things from my list above and they are all delicious. That’s the fun part. You can play around with it and make all kinds of combinations. Sprinkle each tortilla cup with the toppings.

Pour egg mixture over the toppings. Sprinkle cheese over each cup.

Bake, covered with foil, in a 350 degree oven for 25 minutes or until egg is cooked through. I uncover mine for the last couple of minutes to make the tortilla edges crispy because I LOVE the flavor it gives it. My hubby likes them softer, so I leave them covered the whole time for him. You will have to play around with them to see what you like best.

These Breakfast Burrito Bites are so delicious. They are full of flavor, but they would also be good served with a little salsa or hot sauce. And really, they are also so much healthier than grabbing breakfast on the go anywhere else.
To freeze: Set them nicely upright in a single layer in a gallon ziploc bag and pop in the freezer. To eat, just remove desired amount from the bag, place on a plate and pop in the microwave. They warm up perfectly.
My Ella loves them too. This is her saying, "ooooooooo" before taking her first big bite into one.

Make all of these smaller by using tart pans! Then you can throw a bunch in small plastic cups like the ones that the nabisco cookies come in ( they have lids) and it's a great truly bite sized breakfast for the kids!

We love burritos and this recipe came just in time. We're driving on a trip next week and I was looking for something to freeze and take with us for breakfast since the hotel fare isn't always the best. These are just perfect.
