Strawberries and Cream 5 Ingredient Valentine Cookies


I love to make these Strawberries and Cream Cookies with Ella because they are so easy to make... Only 5 ingredients to be exact! {They are also the perfect cookie for Valentine's Day!}She loves them because they are pretty and pink; She calls them princess cookies. 

I will also be also sharing another Valentine's Day treat with you tomorrow. I apologize for so many recipes... well, not really because they are reeeeeeally yummy... but, I am in the midst of preparing for some pretty big, fun home renovations, and I can't wait to share what we are up to! 


In a large bowl, mix together:

1 strawberry cake mix
2 eggs 
1/3 cup oil
1/2 tsp. vanilla

Drop 1 1/2" spoonfuls onto a parchment lined cookie sheet and bake at 375 degrees for 7 minutes or until bottoms are lightly golden brown. Do not overcook. Remove from cookie sheet and let cool.


Once cooled, melt 1 cup vanilla baking chips in double boiler or microwave. If melting in the microwave, I recommend heating in 15 to 20 second intervals stirring in between, being careful to not overcook. {tip: If your melted chips seem too thick and you want them a bit smoother, stir in a tsp. of oil}

Dip the edge of each cookie into the melted vanilla chips and lay on parchment to cool. Add sprinkles if desired {optional}. I used the clear sugar sprinkles. Let dry before handling. Store in a Ziploc bag to maintain freshness and softness. 
  

That's it! Super easy and even totally doable with a 2 year old helper!

These were great for my daughter's Valentine's Day party! I piped them as a V (out of a sandwich bag with a corner cut off). When they spread during baking, they looked like hearts!
