Christmas Peppermint Crispy Rice Treats and Blog Hop!


I have a super easy {and absolutely delicious!} recipe to share with you today that is perfect for parties, neighbor gifts, bake sales, and anything Christmasy! These are a gooey, soft crispy rice treat, with a lightly peppermint flavored, decadent chocolate topping, garnished with soft peppermint candies. It takes just a few minutes, and only a few ingredients, to whip these up, so they are the perfect go-to treat recipe for the holidays.

You will need:
1 stick of butter
1 bag of mini marshmallows
5 1/2 cups of crispy rice cereal
1 bag semi sweet chocolate chips
1/4 tsp peppermint extract 
crushed soft peppermint butter mints (Walmart has them year-around)

In a heavy pot on medium heat, melt 1 stick of butter. Add 1 full bag of mini marshmallows {or at least most of it if you are like me and Ella and sneak a few!} Stir over heat until marshmallows are mostly melted. remove from heat and stir until they melt the rest of the way. Add cereal and stir until well coated with the marshmallow mixture. 

Press into a pan of your choice. A 13x9 pan works well or I love to use my 7 1/2" x 11" pan for a slightly thicker treat. Set aside to cool.

Pour chocolate chips into a microwave safe bowl. Microwave, stirring every 15 seconds until almost completely melted. Remove from microwave and stir until it is the rest of the way melted. Add peppermint extract to chocolate and stir well. Pour chocolate over crispy rice treats and sprinkle with crushed peppermint butter mints. Allow to cool before cutting and serving.

I would have to agree with everyone else, YUMM!!!! these look Amazing! I seriously could eat the whole batch. I am the type to eat the toppings first... :) Then the chocolate, then the yummy rice crispies. Thanks for sharing these with us and so glad to be partying with you again!
