Cranberry Orange Muffins

Ingredients

  • 2 cups all-purpose flour (240g)
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup granulated sugar (200g)
  • zest of 2 oranges
  • ½ cup milk (120mL)
  • ½ cup vegetable oil (120mL)
  • ¼ cup orange juice (60mL)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • cups fresh or frozen cranberries (180g)

Instructions

  1. Preheat oven to 400°. Line a regular sized, 12 muffin pan with paper liners.

  2. In a medium mixing bowl, whisk together flour, baking powder and salt until fluffy and well combined.

  3. In a separate larger bowl, add sugar and orange zest. Whisk together for about a minute until combined and fragrant.

  4. Add milk, oil, orange juice, eggs, and vanilla and stir until well combined.

  5. Pour the flour mixture into the sugar mixture and stir until almost combined. It's ok if there are small lumps of dry ingredients.

  6. Fold in the cranberries and stir just until evenly throughout.

  7. Divide batter between the 12 baking cups and bake for 20-25 minutes or until a toothpick comes out clean. Let cool in pan for a few minutes before removing.
