I was messing around in the kitchen a couple of weeks ago, and I made
up this little recipe. I wanted this cookie to be as healthy as
possible while still being, well... edible.
The nice thing about this recipe is it has no butter, no shortening, and no
refined sugar... and surprisingly, it still has a lot of flavor.
It is 100% healthy... unless you add the optional chocolate chips
{which I highly recommend}. They make it slightly less healthy,
and exponentially more delicious.
There is nutritional value in chocolate, right?
This is what you will need:
3 very ripe bananas
1/2 cup honey
1 T. Vanilla
2 eggs
1 T. Olive Oil
3 Cups Old Fashioned Oats
2 1/2 Cups Whole Wheat Flour
update: you can omit some of your flour if you wish and it will still turn out fine
1/2 Cup Almond Flour
(can use 1/4 cup WW flour instead)
1 tsp. Baking Soda
3 tsp. Cinnamon
1 1/2 tsp. Nutmeg
2 Cups Walnuts, chopped
1 Heaping Cup Raisins
1/3-1/2 Cup Chocolate Chips
(optional, but highly recommended)
Mix all wet ingredients in a bowl. Add oats to wet mixture and let stand for about
5 minutes to soften. Add spices and baking soda, mixing well. Add Flours,
combining without over mixing. Add raisins, nuts, and chocolate chips (optional).
Drop heaping spoonfuls (don't roll into a ball) of dough onto a GREASED
cookie sheet. Bake at 350` for 8 to 9 minutes. Try not to over bake or the cookies will be dry.
After removing cookies from the oven, let stand on warm pan for 3 minutes to
finish cooking. Store in an air tight bag once cooled.
Recipe makes approximately 36 cookies.
Enjoy! These cookies should be moist and hearty... the perfect snack!

I like having a nice healthy snack I can throw in my purse for later. I would imagine that it would be yummy to add flax, dried cranberries, sunflower seeds, etc. to this recipe. If I try it out, I will let you know!
In the past, I have made up various other recipes, but this is really my first attempt at making up my own baking recipe... and it actually turned out great! I was shocked pleasantly surprised.

I made these yesterday! They were much more of a hit then my last "healthy" dessert recipe that I did. Note to self...don't try to use Garbonzo beans and think that your dessert ISN'T going to taste like beans...it does (don't be fooled). haha. But this was fantastic...all ingredients that we love, so what's not to like about it? I didn't include raisins or walnuts, just the chocoloate chips/chunks and it was so delish. I did use 1/4 c. of brown sugar and only 1/4 c. honey...my husband KNOWS when there isn't sugar in a recipe. They were awesome! My co-workers liked them too. I love banana bread and they tasted like a banana choc. chip bread cookie. MMM MM good! Nice work on this recipe! I will be making them again!
