Smashed Potatoes with Garlic and Herbs

Delicious smashed potatoes with garlic and a pinch of herbs, rosemary and thyme is quick and easy to make for Thanksgiving, Christmas, or is even perfect for your weeknight dinner.

Ingredients

  • pounds little red (or yellow) potatoes
  • 3 tablespoons butter (I use salted butter)
  • 2 cloves minced garlic (or 1 teaspoon)
  • 1 tablespoon olive oil
  • ½ tablespoon chopped fresh herbs (rosemary and thyme)
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly cracked pepper

Instructions

  1. preheat oven to 425°

  2. Boil whole potatoes in a big pot until fork easily slides into the soft centers, approximately 10-15 minutes. Strain in a colander and allow to sit for a few minutes to sort of air dry.

  3. Either grease a baking sheet or line with parchment paper. Dump potatoes onto pan and smash each one down with the back of a fork or potato masher, keeping them in one piece.

  4. Bake for about 12 minutes.

  5. While potatoes are baking, melt butter in a skillet over medium heat. Add garlic and sautee for about a minute. Remove from heat and stir in olive oil and freshly chopped herbs.

  6. Remove potatoes from the oven and drizzle with butter mixture, evenly disbursing the minced garlic. Sprinkle potatoes with salt and pepper.

  7. Put potatoes back in the oven and bake for an additional 12-15 minutes or until potatoes begin to turn golden brown. Keep a close eye on them to be sure to remove them from the oven before the garlic burns.
