Oven Roasted Carrots

These oven roasted carrots are a delicious and healthy side dish recipe that my whole family loves. They come together in just minutes and are the perfect compliment to chicken, beef, roast, or really any yummy dinner!

Ingredients

  • 12-14 carrots (14 if they are thin, less if not)
  • 3 tablespoons olive oil
  • teaspoon kosher salt
  • ½ teaspoon black pepper freshly ground
  • fresh parsley or dill, minced for garnish

Instructions

  1. preheat oven to 400°

  2. Cut tops off of carrots (and bottoms if you prefer). Cut each carrot at an angle, in 1 1/2" slices. Cut the slices that are too thick in half lengthwise.

  3. Dump carrots in a bowl and throw oil, salt, pepper on top of them. Toss the carrots until well-coated.

  4. Spread out onto a parchment lined baking sheet with sides. Make sure carrots are in a single layer.

  5. Bake in the oven for 20 minutes or so until they are fork tender but not mushy.

  6. Remove from oven and sprinkle with fresh herbs (optional) before serving.
