Jalapeno Popper Dip with Bacon

Ingredients

Dip

  • 10 slices bacon cooked
  • 2 jalapeños diced
  • 1 tablespoon butter
  • 8 oz. cream cheese room temperature
  • 2/3 cup sour cream
  • 1 teaspoon garlic powder
  • 1 ½ cups Monterey Jack cheese shredded
  • 1 ½ cups cheddar cheese shredded
  • a pinch of salt and pepper to taste

Topping

  • 4 tablespoons butter melted
  • 1 cup Panko bread crumbs
  • ½ cup grated parmesan cheese
  • diced green onion or extra jalapeno for garnish

Instructions

  1. Preheat oven to 350°

  2. Cut Jalapenos in half lengthwise and remove the top, seeds and membrane. Dice into small pieces. Sauté in a frying pan with 1 tablespoon butter until just slightly softened.

  3. In a mixing bowl with the paddle attachment (or a bowl with a spoon) cream together cream cheese and sour cream. Add garlic powder, cheddar and monterey jack cheese until combined. Add jalapenos and 8 of the slices of bacon (chopped), mixing until well combined.

  4. Spread dip filling into an oven-safe 8x8 casserole dish or small cast iron skillet. In a small bowl, melt 4 tablespoons butter. Stir in Panko breadcrumbs and parmesan cheese. Sprinkle on top of dip.

  5. Bake for about 20 minutes, or until the dip is golden and bubbly around the edges.

  6. Garnish with green onions or extra jalapeno, and the remaining 2 strips of bacon, chopped.

  7. Serve warm with bread, crackers, or chips.
