Freezer Breakfast Bagel Sandwiches

The best breakfast bagel sandwich to make ahead and keep frozen for those quick mornings on the go. Whether it is back to school or work, these are delicious, convenient and healthier than other fast food options.

Ingredients

  • 12 eggs
  • 2 T milk
  • 1/2 tsp. ground pepper
  • 1/2 tsp. salt optional
  • 12 slices ham or cooked bacon
  • 12 slices cheese
  • 12 mini bagels

Instructions

Eggs

  1. Preheat oven to 325 degrees.

  2. In a mixing bowl, add eggs, milk, salt (optional) and pepper. Whisk together until well combined.

  3. Grease muffin pan generously. Pour egg mixture evenly between the 12 muffin cups.

  4. Bake for 17-19 minutes until eggs are just cooked. Be careful not to over-cook.

Assemble the Breakfast Bagel Sandwiches

  1. On one half of the bagel, stack the cheese, meat, egg, and then top with the other half of the bagel.

  2. If you are going to eat right away, pop in 350 degree oven for 10-15 minutes or until the cheese melts.

To Freeze

  1. Wrap each sandwich individually in parchment, foil or a resealable plastic bag.

To Reheat

  1. Quickest- remove sandwich from the freezer and pop it in the microwave, still wrapped in parchment, for one minute or so, depending on your microwave. If you used foil or plastic to wrap before freezing, make sure you remove and wrap in a paper towel before microwaving.

    Best tasting option- thaw overnight. Wrap in a paper towel and microwave 40 seconds- 1 minute depending on your microwave. You can also put them on a baking sheet and pop them in a 350° oven for 10 to 15 minutes.
