Pumpkin Snack Cake

  • 3/4 cup oil
  • 1/2 cup applesauce unsweetened
  • 2 cups sugar
  • 2 cups pumpkin puree
  • 4 eggs
  • 2 tsp. vanilla
  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 3 tsp baking powder
  • 1/4 tsp salt
  • 4 tsp pumpkin pie spice

Cream Cheese Frosting

  • 4 tbsp butter room temp
  • 4 oz. cream cheese (1/2 block) room temp
  • 4 cups powdered sugar
  • 3 1/2 tbsp whole milk
  • 1 tsp vanilla


Pumpkin Snack Cake

  1. preheat oven to 350 degrees. 

  2. In a mixing bowl, blend together oil and applesauce. Add sugar and pumpkin puree and mix well. Mix in eggs and vanilla. 

  3. In a separate bowl, mix together flour, baking powder, baking soda, salt, and spices. Add dry ingredients to wet mixture, a little bit at a time, mixing until combined. 

  4. Pour batter into a parchment-lined 13x9 baking dish and bake for 35 minutes. Let cool before frosting.

Cream Cheese Frosting

  1. For icing, whip butter and cream cheese together in mixer. Alternate adding powdered sugar and milk until well combined and nice and creamy. Add vanilla. spread on top of cooled cake

  2. optional: lightly sprinkle cinnamon over frosted cake.
