crushed soft peppermint butter mints(Walmart has them year-around)
Instructions
In a heavy pot on medium heat, melt 1 stick of butter. Add 1 full bag of mini marshmallows {or at least most of it if you are like me and Ella and sneak a few!} Stir over heat until marshmallows are mostly melted. remove from heat and stir until they melt the rest of the way. Add cereal and stir until well coated with the marshmallow mixture.
Press into a pan of your choice. A 13×9 pan works well or I love to use my 7 1/2″ x 11″ pan for a slightly thicker treat. Set aside to cool.
Pour chocolate chips into a microwave safe bowl. Microwave, stirring every 15 seconds until almost completely melted. Remove from microwave and stir until it is the rest of the way melted. Add peppermint extract to chocolate and stir well. Pour chocolate over crispy rice treats and sprinkle with crushed peppermint butter mints. Allow to cool before cutting and serving.
