Mix 1 3/4 cups of flour together with the salt and make a well in the center. In a separate bowl, beat together egg and yolks. Add oil and water, beating until well combined. Pour egg into flour mixture and mix well. Use the remaining flour to dust your work surface. Dump your dough onto the flour and knead for 10 minutes (disclaimer: I actually just use the dough hook on my mixer). Divide dough in half and cut into strips. We like ours about 1″x5″ or so. Separate noodles (see below for more detail) and allow to dry on either side for about 45 minutes. Drop into soup and boil until cooked through.
