Taco Salad Lettuce Wraps with Avocado Ranch Dressing
1head of baby romaine or butter lettuce
1 1/2TTaco seasoning
1 1/2cups cherry tomatoeshalved
1canblack beansdrained and rinsed
1bunch cilantrolightly chopped
Crunchy tortilla strips
1cupshredded cheddar or Mexican blend cheese
Avocado Ranch Dressing
1large ripe avocado
1/2cupsour creamI use light
1/4cupmilkor more to thin to taste
1tablespoonfresh squeezed lemon juice
1 1/2tsprice vinegar
3clovesminced garlicapprox 1 1/2 tsp.
2tablespoonsminced dried parsley
1/4tsp.saltor more to taste
Pull the lettuce leaves off of the stock and rinse well. place on a towel and set aside.
Brown the ground beef in a pan on the stove. Once cooked, add taco seasoning and water. Let simmer for 3 minutes.
To assemble a wrap, place one leaf of lettuce on a plate or in your hand. Layer ground beef, tomatoes, black beans, olives, and purple onions. Sprinkle with cilantro, cheese, and tortilla strips. Drizzle with avocado ranch dressing and enjoy!
Mash avocado in a bowl until smooth. Add sour cream and mix well. Whisk in milk. Then add lemon juice, vinegar, garlic, parsley, and salt stirring in between each ingredient.
