Yesterday I promised I would share my mom's caramel recipe with you, and trust me, this is one you will want to keep in your file. It is so soft and luscious and delicious. I love how I can use it for so many things too. Anytime I need caramel for holiday treats, apples, or popcorn I always use this. And trust me, it is SO worth the extra time it takes to make homemade caramel. The little store bought caramels don't hold a candle to these.

For caramel apples, I will share my tips and tricks on Wednesday.
Tips:
~Use a good, heavy pan. This will keep the heat even.
~Invest in a good quality candy thermometer.
~I found that using a good, heat resistant rubber spatula gets the best results.
~Use good quality ingredients. It really does make a difference.
