I have a delicious fall recipe for you today- Pumpkin Snack Cake with Cream Cheese Frosting! It's another fun recipe in our Tastes of the Season tour so I will link to 20 delicious pumpkin recipes at the end of this post! This moist cake is the perfect combination of pumpkin, spice, moist cake, and creamy frosting. It is so easy to throw together and fills your home with the yummy scents of Autumn.
This cake is delicious the way the recipe is written, but is also easily customized or altered. The cake is great with or without the frosting. It would also be yummy to omit the frosting and add chocolate chips or nuts to the cake. This cake is so good that my kids actually demolished a good portion of it while I was putting the baby down for a nap (insert eye roll).
This cake would be perfect for autumn entertaining or for taking a treat to a friend. I love to keep to-go boxes from the restaurant supply store on hand so I can easily take these goodies to people (you can also order them HERE).
One quick note- You can make homemade pumpkin pie spice using this recipe HERE. It uses spices you probably already have in your cupboard and tastes much better than store-bought!
Pumpkin Snack Cake with Cream Cheese Frosting
An easy pumpkin cake with cream cheese frosting combines moist cake, perfect spices, and creamy cream cheese frosting.
Ingredients
Pumpkin Snack Cake
- 3/4 cup oil
- 1/2 cup applesauce unsweetened
- 2 cups sugar
- 2 cups pumpkin puree
- 4 eggs
- 2 tsp. vanilla
- 2 cups all-purpose flour
- 2 tsp baking soda
- 3 tsp baking powder
- 1/4 tsp salt
- 4 tsp pumpkin pie spice
Cream Cheese Frosting
- 4 tbsp butter room temp
- 4 oz. cream cheese (1/2 block) room temp
- 4 cups powdered sugar
- 3 1/2 tbsp whole milk
- 1 tsp vanilla
Instructions
Pumpkin Snack Cake

preheat oven to 350 degrees.

In a mixing bowl, blend together oil and applesauce. Add sugar and pumpkin puree and mix well. Mix in eggs and vanilla.

In a separate bowl, mix together flour, baking powder, baking soda, salt, and spices. Add dry ingredients to wet mixture, a little bit at a time, mixing until combined.

Pour batter into a parchment-lined 13x9 baking dish and bake for 35 minutes. Let cool before frosting.
Cream Cheese Frosting

For icing, whip butter and cream cheese together in mixer. Alternate adding powdered sugar and milk until well combined and nice and creamy. Add vanilla. spread on top of cooled cake

optional: lightly sprinkle cinnamon over frosted cake.
