I was in need of a fast and easy dinner the other night and since my kids love breakfast for dinner, I thought I would try baking some eggs in a muffin tin for some egg sandwiches. I buttered up my toasted up english muffins, put a slice of my favorite Havarti cheese on them and then topped them with the baked egg. Super easy and fast. I also tried this with a fried egg. Equally delicious!
Easy Oven Egg Sandwiches
Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes
Ingredients
- 1 package english muffins
- 6 eggs
- sliced Havarti cheese or whatever cheese you prefer
- butter
- salt and pepper to taste
Instructions

Preheat oven to 350. Spray muffin tin with cooking spray and crack an egg in to each individual well. Season eggs with salt and pepper. Bake for 10-15 minutes, depending on how soft you want your yolk. Meanwhile, toast your english muffins, top with butter and cheese. Add your baked egg and enjoy!

Kristen's note and adjustments:
To Freeze: I make up a bunch of these at a time (I add a cooked turkey sausage patty to each one and usually use cheddar cheese instead of the Havarti. I also scramble the eggs a little in the muffin tin). I package them individually in sandwich sized Ziploc bags, freeze them separately so they don't get squished, and then put a bunch in a larger freezer Ziploc. For those mornings on the go, just take it out of the baggie, wrap in a paper towel and throw it in the microwave for a couple of minutes. It is a perfectly delicious, hot breakfast on the go!

Do you have to scramble the eggs if you are going to freeze them? Or are they okay just baked like the eat right away ones?
