I love to splurge and eat a good Alfredo sauce on special occasions, but sometimes I want the Alfredo taste without all of the calories. This recipe is one I stole from my mom and I love that she has replaced all of the cream and butter with avocado! So smart! It definitely doesn't lack flavor or creaminess either. It is DELICIOUS... and toddler approved too. My Ella scarfed it down so quickly.
The consistency is a little different than a regular full fat Alfredo, but this is really wonderful. And the best part: It only takes about 20 minutes at the most to make.
{I guess I should have made my avocados look a little more perfect here, and cleaned the smudges and hard water off of my blender... oops... 🙂 }
Avocado Alfredo Sauce

yeid: 3 cups
Ingredients
1 ripe, soft avocado
3 tablespoons olive oil
juice from 1/2 lemon
1/2 cup shredded Parmesan cheese
1 1/2 tsp minced garlic (only 1 tsp. if you don't like it really garlic-y)
3 cups cooked Penne pasta
Instructions
Cook your pasta while you are making your Alfredo, following package instructions.
Put all ingredients in a blender or food processor and blend until combined and smooth. You will need to scrape the sides and re-blend a couple of times. (please note: my blender seemed to not get it very well, so I put the sauce in a bowl and used my hand blender until it was smooth). Set aside until pasta is finished cooking.
When the pasta is finished cooking, drain (do not rinse) and quickly pour alfredo on top while pasta is still hot. Toss together until pasta is well coated (see picture below). This will make the parmesan melt and the Alfredo warm. Serve immediately.
Before serving, I topped with some chicken that I had grilled, and sprinkled on a little extra parmesan cheese and dried parsley. So delicious!

Love the idea of using avocado instead of heavy cream. Makes me wonder about all the great soup recipes I'm wanting to make such as tomato bisque or crab bisque. Wonder if I could substitute an avocado (or half avocado) for the heavy cream? worth a try. Thanks for a great recipe.
