I'm so excited! Our new carpet is going in next week! I can't wait to share the pictures with you. So, for this week we will be busy, busy basically packing up our whole house. But first, I have a whole craft room {disaster} to sort through and declutter. I got tired just typing that. This should be interesting with a newborn and a 2 year old.
For today, Jill has the most amazing recipe to share with you. The first time I ever had the honor of eating one of Jill's goodies, she made this. I have loved her ever since. It is a thick custard-like dessert and the vanilla bean just gives it the best flavor.
This is a super simple dessert that looks extra fancy and tastes amazing! And the best is, it only takes about 10 minutes to prepare. Then you can just pop it in the fridge to let it set up. I have served this at several group gatherings and it is always a hit! You can make them a day ahead and then top with a few berries right before serving.
Ingredients:
(Makes 16- 1/4 c servings)
3 Tablespoons cold water
1 Tablespoon gelatin
4 cups heavy cream
2/3 cups sugar
3 Tablespoons lemon juice (or more depending on how much lemon flavor you want)
1/2 vanilla bean, split down the middle removing the "caviar")
Fresh berries for topping
In a small bowl, sprinkle gelatin over cold water and let it bloom for at least 5 minutes.
While the gelatin is blooming, combine cream, sugar, vanilla bean caviar and the vanilla bean pod in a medium pan. Whisking constantly, bring cream mixture to a simmer over medium heat. Once it begins to simmer, remove from heat. Add lemon juice and stir to combine. Add a few spoonfuls of the cream mixture to the gelatin and whisk to dissolve. Add the gelatin back in to the cream mixture and whisk. Once combined, pour cream into individual cups or bowls. Chill in the fridge for at least 2 hours. Top with fresh berries and serve!
