Over the weekend, I wanted to make my hubby some muffins so I revamped a recipe I saw online.
I made a moist, yummy Pumpkin Apple Muffin. These are SO EASY to make!
And, the best part is that they don't have any oil, eggs, shortening, or butter!
{Unless, of course, you add some as a topping afterward}
Couple them with a Chai and a good book, and......ahhhhh...... heaven.
Pumpkin Apple Muffins
Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Ingredients
- 1 Spice Cake Mix
- 1 15 0z Can Plain Pumpkin
- 1 Apple cut into small chunks
Instructions

Divide batter evenly between all 12 greased cups of your muffin tin.

Bake at 350 for 15-18 minutes, or until your toothpick comes out clean.
Yes, that's it! Can you believe it only needs 3 ingredients!?
They seem to be even better the next day as the apple makes them even MORE moist.

These are some of my favorite breakfast muffins & I always have to dig through my pinterest boards to find the recipe for the cooking times/temp! I should have it memorized by now! I tried to google the recipe but it showed a million & one OTHER pumpkin apples recipes. I couldn't find your blog, though! So here I am--making a big deal about a typical 350* cooking temp! haha! I totally made these muffins without the apple, but love that you added that. I added chocolate chips to mine...yours sound healthier LOL
