I’m super excited to share this fall recipe I’ve been kicking around in my mind for a few years now. Let me tell you, caramel and apples tucked in a spiced blondie are everything I imagined they would be!
Like so many other recipes that save me on extra busy days, which seem to be more and more often, this one begins with a mix.
Basically, these are my new version of the famous “knock you naked” brownies. The first thing is to make the blondie dough, which is just a cake mix, an egg, and butter. Sounds good already!
The next layer consists of melted caramels, cream…
And chopped apples!
Pour the caramel apple mixture over the base blondie layer and sprinkle a few white chocolate chips on top. Chocolate makes this mommy happy!
Top the gooey goodness off with the rest of the blondie dough. I sprinkled walnuts on half of the dough, a little for the nut lovers and a little for those who aren’t!
You house is going to smell divine and they bake. If you can stand it let them cool until they are just warm. I love these served with a sprinkling of powdered sugar. My boys, however, enjoy their blondies with vanilla ice cream and a drizzle of caramel sauce. Ok, I like ‘em with all that extra decadence too!
These scrumptious blondies are a cinch to make and are the perfect treat for a beautiful fall day!
Caramel Apple Blondies (A Version of Knock You Naked Brownies)
Ingredients
Dough
- 1/3 c. evaporated milk
- 1 18.5 ounce Spice Cake mix
- ½ c. butter melted
Caramel Mixture
- 1/3 c. evaporated milk
- 60 caramels unwrapped
- ½ c. peeled and finely chopped apples I used Gala
- ½ c. white chocolate chips
- ½ c. chopped walnuts optional
- ¼ c. powdered sugar optional
Instructions

Preheat oven to 350 degrees. Mix dough ingredients together, dough will be stiff. Press half of the mixture in the bottom of a foil lined or greased 9 x 9 baking pan. Bake for 8-10 minutes. (Reserve the other half of the mixture for the top layer.)

Add caramels and milk to a microwavable mixing bowl. Microwave for 30 seconds, at half power. Continue to microwave in 30 second increments until caramels are melted and smooth.

Add apples to caramel mixture. Stir.

Pour over first baked layer. Sprinkle with white chocolate chips.

Mold remaining blondie dough into a thin sheet and set over caramel layer. It’s okay if it doesn’t completely cover the caramel, or if it doesn’t look pretty. Everything will even out while it’s baking and life will be good again! Sprinkle walnuts over this layer if desired.

Bake for 20-25 minutes. Let cool a little and sprinkle with powdered sugar if desired.
