We love these buffalo chicken lettuce wraps for game day (or any day)! We make them along with our favorite jalapeño popper dip with bacon or green chile spinach and artichoke dip. I may not watch a lot of football, but any excuse to make delicious appetizers!

About Buffalo Chicken Lettuce Wraps
I set out to create this recipe almost a decade ago when I was on a big lettuce wrap kick (see my 7 must-try lettuce wraps) and it has remained one of our very favorites!
The best thing about these lettuce wraps is that they have delicious layers of flavor-a really yummy twist on the traditional buffalo wings. The spiciness of the chicken is so perfectly complimented by the crispness of the lettuce and celery and the creaminess of the blue cheese.
Oh, and it comes together in under 20 minutes! It's so easy!

Ingredients for Buffalo Chicken Lettuce Wraps
- 2 large chicken breasts cooked and shredded
- butter
- olive oil
- Franks Red Hot Wing Sauce
- celery seed
- fresh ground pepper
- celery
- blue cheese crumbles
- ranch dressing
- lettuce (romaine or iceburg)
You can use any lettuce you prefer for this recipe, but I love one that has a little more crunch to it like romaine or iceberg. The cool crispness pairs so well with the spiciness of the chicken.
How to Make Buffalo Chicken Lettuce Wraps

This recipe can be made in a few simple steps:
- In a large pan, cook and shred your chicken. To cook mine, I just put the chicken in the pan over medium/high heat with 1/2 cup of water, shredding it with 2 forks as it cooks. By the time it's finished cooking, all of the water cooks off.
- Keep the pan on medium/low heat. Add butter and olive oil, stirring until melted and combined.
- Add hot sauce, celery seed and then pepper to taste.
- Remove from heat and stir in thinly sliced celery.
- To assemble lettuce wraps, scoop a spoonful of chicken mixture into lettuce leaves. Sprinkle with blue cheese crumbles and drizzle with a little ranch dressing.
- Serve immediately while the chicken is still warm.
You can refrigerate any unused chicken in an air-tight container for up to 4 days. I would suggest storing the layers (lettuce, cheese, chicken) separately in the fridge and assembling them after reheating the chicken.

I think it is decent cold, but it is totally personal preference. You could always reheat the buffalo chicken in the microwave.

made this tonight and it was a hit! I seasoned my chicken with s&p and baked in a 375 degree oven until cooked through. Then shredded and mixed it in with butter and oil-- it was great!! Thanks for a great recipe and quick dinner suggestion.

My suggestion is, when you are boiling the chicken, why not add hot sauce at that point to infuse it into the chicken. Mine is cooking right now and I can't wait!
