These no-crust bites are so quick and easy... and so yummy. When we order pizza, my toddler just eats the toppings and leaves the crust. One day the idea just popped into my head to try to make crust-less pizza bites. The result was a definite keeper! They are also Gluten free and low-carb, depending on the toppings and sauce you use! Feel free to get creative with them~
I made these ones here in the pictures like a hawaiian pizza, but you could add whatever toppings you like. Some ideas include peppers, onions, mushrooms, spinach, pepperoni, cooked sausage, etc. It is fun to try out new flavors.
No-Crust Pizza Bites
Prep Time 10 minutes
Cook Time 40 minutes
Total Time 50 minutes
Ingredients
- Thicker cut Canadian bacon- not the thin stuff I get mine at Costco
- Shredded Mozzarella cheese
- Pizza sauce or I prefer spaghetti sauce
- Pizza toppings of choice I used pineapple, well drained
Instructions

First, lightly grease a regular size muffin tin. Place 3 pieces of your thick cut canadian bacon, into each cup of your muffin tin. Press down into cups. They won’t stay in cup form very well, but that’s okay. They will take that shape more when you add the toppings.

Gather your toppings, sauce, and shredded cheese. Drop 1 Tbls. of sauce into each cup.

Add toppings.

Top with a generous amount of Mozzarella cheese

Bake at 350 degrees uncovered for about 27 minutes or until the top is bubbly and golden brown. Watch them carefully toward the end to avoid overcooking.
Recipe Notes
NOTE: you can modify this recipe to use a mini muffin tin if you would like, using only one slice of canadian bacon per cup and only a little of the toppings

Add toppings. Load up those cups! I like them decently full.
Top with a generous amount of Mozzarella cheese.

Remove them from the pan using a fork to pop them out. There will be a little bit of juice to discard in the bottom of each cup.
You can eat them with a fork or by hand, but just to warn you they are a bit messy. We still eat them with our hands, but I thought I would warn you anyway 🙂

I made these just last night, but used whatever we had in the fridge as toppings, and OH MY GOSH! They were YUMMY!!! I was a little worried they would fall apart because my ham was different than what the recipe suggested and had a lot of juice at the bottom of the cup, but it came out wonderful and my husband loved em too.
