I feel like the last week has been a whirlwind!
My mom ended up in the hospital out of state (not to worry, she is OK now), so I catered an event for a Brighton Jewelry night at a local shop that she was going to cater.... while my hubby was out of town.... for 150 people.... and I had one day to prepare
So, between nap times, Ella and I ran to the grocery stores. While she was sleeping, I baked, cooked, packaged, and prepped. And, somehow, by the skin of my teeth, I pulled it off.
The theme was springtime hors d'oeuvres. So, this is what I came up with:
(I sincerely apologize for the horrible pictures... I took some of them after everyone began to demolish the food... with my Cell Phone... I was tired and forgot my real camera)
Multi grain crackers with a spinach artichoke dip and cucumbers with tzatziki
Mini slices of Watermelon
My Lemon cookies
(I will post the recipe for these one of these days. It is a recipe I made up and it is funny how often I get requests for the recipe! When you see how easy they are to make, you will laugh too)
Caprese bites with cherry tomatoes, basil and mozzarella
mmmmm.... these were so good.
My mom had already made some chocolate cupcakes ahead of time with the intent to frost them and stick strawberry slices on them, so I did that as well. I just don't have a picture of those.
My very dear friend stepped in and took Ella while I went and delivered and put out the food. She is just the best. So, it ended up being pretty fun to catch up with people I haven't seen in a long time.
The food was pretty yummy, if I do say so myself. I thought I would post these ideas in case anyone needs to come up with some springtime hors d'oeuvres in a pinch.
I think this week might prove to be equally as crazy... but I will have some really fun pictures to show for it next week. I am doing the flowers for a vintage inspired wedding and I think it will be really fun to share.

You totally amaze me! I'm excited to see the pictures from the wedding!! And I will be waiting to get the lemon cookie recipe... Lemon is my FAVORITE!!! Good luck with the flowers!
